Il polialcol Eritritolo
L'eritritolo è un polialcol naturalmente presente nella frutta e nei cibi fermentati.
I polialcoli non sono altro che molecole molto simili agli zuccheri semplici, ma a differenza di questi ultimi presentano alcune differenze molecolari che NON li rendono assimilabili dall'uomo e per questo sono definiti ACALORICI.
L'eritritolo è utilizzato come dolcificante naturale in quanto ha un ottimo sapore ed è privo di retrogusti.
La differenza principale fra l'eritritolo e gli altri polialcoli (sorbitolo, mannitolo, ecc...) è che ha una tolleranza digestiva molto più elevata: i polialcoli in genere se consumati in quantità elevate possono provocare effetti collaterali indesiderati a livello intestinale, ad esempio effetti lassativi. Ciò non accade con l'eritritolo.
Un alleato nella dieta per i diabetici
Come tutti sappiamo chi soffre di diabete, indipendentemente dalla gravità della malattia, deve prestare un'attenzione particolare agli zuccheri semplici ingeriti durante il giorno. E' infatti una caratteristica degli zuccheri quella di alzare la glicemia nel sangue:
- gli zuccheri semplici (saccarosio, il classico zucchero "da cucina") danno un picco molto veloce, circa 30 minuti dopo la loro assunzione;
- gli zuccheri complessi (come l'amido, contenuto nella pasta) hanno un'assimilazione più lunga nel tempo, di circa 2 ore.
L'eritritolo non rientra invece in nessuno dei due meccanismi di innalzamento glicemico, in quanto ha un indice glicemico pari a zero! L'indice glicemico ci indica quanto un alimento alza la glicemia nel sangue dopo l'ingestione.
Per chi soffre di diabete quindi l'eritritolo è un'ottima alternativa, forse la migliore in commercio, al saccarosio (il classico zucchero di barbabietola o di canna).
Vantaggi dell'Eritritolo
Facciamo quindi un breve riassunto sulle proprietà benefiche di questo composto che la natura ci ha donato.
1. Apporto calorico limitato: circa 0.2 Kcal per grammo;
2. Indice glicemico pari a Zero;
3. Potere dolcificante stimato intorno al 60 - 80% del comune saccarosio;
4. Assenza del caratteristico retrogusto tipico dei dolcificanti sintetici o semisintetici;
5. Ridotta attività cariogena, che preserva il cavo orale dalla colonizzazione batterica e dalle relative conseguenze patologiche spesso dolorose.
